Yuletide Greetings and a Festive Recipe
No matter where you are in the world this time of year, it is hard not to get caught up in the festive atmosphere celebrated in different ways by various cultures. So whether you are celebrating a traditional Christmas with your family, looking forward to a New Year’s bash or just looking for some warm conversation with friends and family, let’s all raise a glass and make a toast to a prosperous and healthy New Year. for the kitchen, so in the finest of traditions, I’d like to share one of my favourite beverage recipes with you. I hope you’ll enjoy this drink which has long been a wonderful tradition for Christmas in the western world.
Festive Eggnog
Ingredients
4 egg yolks1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces rum*
1 teaspoon freshly grated nutmeg
4 egg whites**
Directions
Beat the egg yolks until they are a creamy golden color. Gradually add 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, rum and nutmeg and stir to combine.
Place the egg whites in a clean metal bowl and beat to soft peaks. With the mixer still running gradually add 1 tablespoon of sugar and beat until stiff peaks form.
Fold the egg whites into the mixture. Chill and serve. For an additional festive touch, top each glass with a dollop of whipped cream sprinkled with freshly grated nutmeg.
* For non-alcholic egg nog, use 1 teaspoon rum flavoring
** Raw Egg Warning
I suggest caution in consuming raw eggs due to the slight risk of salmonella or other food-borne illness. To reduce this risk, I recommend you use only fresh, properly refrigerated, clean grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the outside of the shell. Use shell eggs that have been treated to destroy salmonella, by pasteurization or another approved method.
